Pink Velvet Cake With Cream Cheese Frosting

INGREDIENTS

2 ½ cups flour1 ½ cups castor sugar1 teaspoon bicarbonate of sodaPinch salt1 cup buttermilk2 extra large eggs1 ½ cups oil1 tablespoon white vinegar½ - 1 bottle pink liquid food coloring1 tablespoon vanilla essence
Topping:250g butter3 - 4 cups icing sugar2 tablespoon milk1 tub Lancewood cream cheese1 teaspoon vanilla essenceCake crumbs

METHOD

1. Preheat oven to 180°C.2. Mix flour, sugar and salt.3. In another bowl combinebuttermilk, eggs, oil, and coloring. Mix well.4. Add into flour, mix well.5. Combine vinegar and bicarb and pour over batter, briskly whisk in.6. Spoon batter into two greased and lined round cake pans.7. Bake for 35-45min, until skewered and cooked through in center. Allow to cool, then remove from pans and cool further.8. Beat cream cheese until smooth.9. Beat butter and sugar until fluffy, add all ingredients and form frosting.10. Sandwich the two layers of cake with frosting and frost the top. Decorate with cake crumbs.
