INGREDIENTS
For the base:
500g (2 cups) of cake flour
65g butter
2 teaspoon baking powder
125ml sugar
1 egg
Pinch of salt
For the filling:
4 cups of milk
2 ½ tablespoon cake flour
3 eggs
60g butter
2 ½ teaspoon cornflour
1 cup sugar
1 teaspoon vanilla essence
Cinnamon sticks
Pinch of salt
METHOD
Base:
1)Cream butter & sugar, add egg & beat well.
2)Add all the ingredients & make a stiff dough.
3) Press into sandwich tin & make in a moderate heat oven until golden brown.
Filling:
1) Boil milk with a few cinnamon sticks.
2) Beat eggs well, add sugar, corn flour, cake flour, salt & add to milk mixture.
3) Mix well & cook until mixture thickens.
4) Add butter & vanilla essence, stir in. Pour onto base & dust with cinnamon powder.
5) Place in fridge to set
INFO & TIPS
Alternatively:
Make base with crushed tennis biscuits & butter.
Note:
Constantly stir mixture to avoid lumps.
