INGREDIENTS
1 Cup crushed bulgar wheat50g vermicelli crushed2 1/2 Cup grated carrots1 1/2 Cup water1 Cup grated coconut (dessicated is fine)2 Cup milk1 1/2 Cup sugar1 teaspoon Elachi (cardomom)4 tablespoon ghee (Clarified butter)Good pinch saffron1/2 teaspoon nutmeg
METHOD
Braise carrots and Elachi (cardomom) in 2 tablespoon ghee (Clarified butter) until soft and shinyBraise bulgar wheat and vermicelli in remaining 2 tablespoon ghee (Clarified butter) on low heat until pinkish in colorAdd water, close lid and allow to simmer until liquid has evaporated Add carrots, sugar, milk, coconut, saffron and nutmeg - I added more Elachi (cardomom) here as wellClose lid and simmer till doneGarnish with nuts and coconut as desired
