INGREDIENTS
Nido 900 grms 2. 2 small nestle cream cans 160 grms each 3. ½ cup soft almost melted ghee (Clarified butter) 4. ¼ teaspoon elaichi powder fine 5. 1 teaspoon rose essence 6. 2 pinches Saffron (Kesar (saffron) (saffron))
METHOD
Method: make Kanka By mixing all above mentioned ingredients in a large stainless bowl like breadcrumbs then take ½ of this crumb mixture and pop onto the food processor give a good nice blitz remove and set in another bowl continue with the other half of the crumb mixture into the food processor again give a nice blitz remove and mix with the other blended Kanaka no need to waste time and sieve like the olden golden days the food processor is a perfect replacement to give even Kanka set Kanka aside
Step 2 make the chasni This is the real part where things can go wrong so best to do Kanka and keep aside so the focus is on the syrup 1. 2 cups sugar 2. 21/2 cups water 3. ¼ teaspoon elaichi powder 4. 1 tablespoon lemon juice5. Method bring all above ingredients to a boil the syrup must be single strand and once you see big bubbles arising that’s the sign it’s going well and almost done check between two fingers the syrup mist be sticky switch off after you see big bubbles and sticky finger test
Step 3 Take the Kanka burfee mixture and stir into the chasni in the pot stir in with a large paddled ladle it’s a bit hard I know therefore at this point I pour the burfee and chasni mixture into the kenwood and give a good beating using the ‘K’ attachment,once all mixed in nice and fluffy set in a greased square pan or you can use an Icecream scoop,or if very adventurous wear gloves as burfee is hot make round balls one size cool and set in fridge then dip in melted chocolate or Lindt white Chocolate and deco as desired with coconut or nuts and alternate choc drizzles this is known as burfee truffles or some like to spread in a tray and cool then add 2 layers of melted chocolate and drizzle with a white chocolate any way you like this is very versatile recipe as the sugar is not so sweet We prefer the traditional way hence I set in a 9 inch cake pan square let it cool and cut squares ._Kindly share as received _ جـَــــزاكـُــــم اللهُ خـَـــــيرًا

You may substitute the nestle cream with equal amounts of Fresh cream (each can weight is 160 grms therefore measure 160 grms of double thick cream to substitute easy to follow recipe I prefer making double double some I cut in squares some I make mini Burfee truffles method explained above already enjoy
