INGREDIENTS
1 cup water1 cup sifted cake flour½ cup butter4 eggs
METHOD
1. Bring water and butter in a saucepan to boiling point. Then stir in flour all at once and stir vigorously till it leaves the sides of the pan and forms into a lump. Then remove from heat,
2. Beat in eggs one at a time and beat till all is smooth and velvety in texture.
3. For bite sized eclairs spray and cook a mini fruit scoop to make small rounded drops of batter on a greased tray.
4. Bake at 200°C for 30 minutes and reduce heat to 150°C and bake for 20 minutes, Switch off oven and bake till dry and crisp.
Sweet Fillings for cream puffs or eclairs :
1. Stiffly whipped cream (sweetened to taste). Fold in cut up fresh strawberries or fruit of your choice
2. Whipped cream. Fold in diced canned fruits or fruit salad drained dry of syrup. This will not require sweetening as fruits are sweet enough
3. Whipped sweetened cream. Add in diced fresh fruit or chocolate chips or chopped nuts.
4. Long or mini eclairs must be filled with cream and glazed on top with melted chocolate.
