INGREDIENTS
Spray & Cook1 ½ cups all purpose flour½ teaspoon baking powder¼ teaspoon bicarbonate of soda113g butter, softened½ cup normal white sugar½ teaspoon fine salt1 egg½ cup maas / buttermilk½ cup milk1 ½ tspns vanilla essence
Icing Glaze:1 cup icing sugar 2 tblspns milk
METHOD
Preheat oven to 160 degrees . Spray mini bundt cake pan with spray & cook and set aside.In a medium bowl, combine flour, baking powder and bicarb with whisk.To soften butter, microwave in its wrapper for 15-20 seconds on high.In a medium to large mixing bowl, add butter, sugar, and salt. Using an electric mixer, beat until mixture becomes smooth and is lighter in color.Add the egg and beat until well incorporated and mixture is smooth again.Add the maas / buttermilk, milk, and vanilla. Beat well and scrape down sides of bowl as necessary.Pour into flour mixture and beat until combined and no lumps are visible.Using an icing bag with a small nozzle, transfer batter evenly into wells of mini bundt pan.Tap pan on counter to even out batter.Bake for 20-25 minutes or until toothpick inserted into center comes out clean.Allow cakes to cool for 5 minutes in pan and then invert onto cooling rack and cool completely before adding icing glaze.
Icing GlazeAdd the both ingredients to a bowl and stir with a whisk until smooth. Drizzle the mini bundts with a tablespoon and allow to set. The taste is absolutely amazing...Enjoy!!!
