Not a quick recipe.Not an easy one either.But the crunch?100% worth it !
🥐 Palmiers (Horseshoe Pastry)

Ingredients
Butter
250 g butter (I used Marvello Professional Margarine)Divide into 3 equal portions
Dough
2 cups flour, sifted½ teaspoon salt½ teaspoon cream of tartarIce water (just over ½ cup, as needed)
For sprinkling
¾ cup cornflour½ teaspoon cream of tartar
For finishing
Ice water, for brushingSugar, for sprinkling
Method
Prepare the dough
In a bowl, sift together the flour, salt, and cream of tartar.Grate 1 portion of butter into the flour and rub in gently with your fingertips until crumbly.Form the dough
Gradually add ice water until a soft dough forms (I used slightly more than ½ cup).Wrap in cling wrap and freeze for 15 minutes.
Prepare the sprinkling mix
Mix the cornflour and cream of tartar together and set aside.
First lamination
Roll the chilled dough into a large rectangle.Grate another portion of butter evenly over the surface.Fold the bottom and top towards the centre, then fold in half.Freeze for 15 minutes.
Second fold
Roll out again, repeat the folding process, and freeze for another 15 minutes.
Final shaping
Roll out the dough one last time.Cut a slit down the centre (do not cut all the way through).Roll without adding butter this time.Starting from one side, fold into 3 folds, then turn and fold completely from the other side.Freeze for 15 minutes.
Prepare for sugar folds
Remove from freezer and cut dough in half.Roll each piece into a rectangle.Brush with ice water and sprinkle generously with sugar.
Palmier fold
Fold both long sides towards the centre.Brush with ice water, sprinkle sugar again, and fold halfway to close.Freeze until firm.
Slice & bakeSlice into even pieces.(At this stage, palmiers can be frozen and baked later.)Bake
170°C in a convection oven, or160°C in a thermofan ovenBake until golden and crisp.
