INGREDIENTS
125g butter. ½ cup brown sugar
½ cup Demerara sugar
2 extra large eggs
½ cup milk. 2 cups flour
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
1 teaspoon mixed spice
1 cup chopped nuts
1 ½ cups fruit cake mix
½ cup chopped dates(optional)
1 teaspoon vanilla essence
METHOD
Mix fruit and nuts with ¼ cup flour. Cream butter and
sugars until light and fluffy. Add egg one at a time . Sift
dry ingredients,and add alternately with milk . Fold in
vanilla essence and fruit mix. Pour into a greased loaf
pan and bake in a moderate oven for an hour or until
done.
