INGREDIENTS
                      1 onion chopped, 1 ½ teaspoon garlic, 1 fresh red chilli finely 
chopped, mushrooms chopped, 400g chopped spinach, 
250ml fresh cream, 3 -5 eggs,(depending on size), 
veggie spices, ground black pepper, handful cheddar 
cheese, 3 rounds of crumbed feta.
                    
METHOD
                      Braise onion, garlic, chilli and mushrooms till nicely soft, 
add spinach and allow to cook till water burns out. 
Seperately whisk eggs, fresh cream, blck pepper and 
veggie spices together. When water has burnt out from 
spinach pot, add egg mixture and stir, quickly add in 
cheddar and crumbed feta and mix well for about a 
minute. Pour into well greased casserole dish and bake 
at 180 for 35 - 45 minutes. Once removed from oven, 
allow to stand for at least 15 - 20 minutes and allow to 
stall.
                    
INFO & TIPS
                      i usually serve this with garlic or cocktail rolls and greek 
salad as a full summer dinner (then i bake it in a round 
deep casserole dish and cut in slices), or bake in 
rectangle dish and serve as starter of savoury with dip.
