¾ cup flour
1 heaped teaspoon baking powder
¾ cup castor sugar
2 tablespoon cocoa/maziena
Sift dry ingredients 3 times.
Beat egg white till stiff, then add castor sugar slowly beating all the time
Add egg yolks and beat well
Add dry ingredients little at a time and keep beating
Pour mixture into greased Swiss roll pan.
Bake at 180’C for 12 minutes
Leave in tray for 5 – 10 minutes to cool
turn onto net and Swiss roll it.
Decorate with either fresh cream inside and chocolate sauce on top or jam inside and mock cream on top
