INGREDIENTS
¼ cup olive oil
2 cups almonds, sliced
2 tablespoon sesame seeds
2 teaspoon crushed red chillies
1 teaspoon salt
2 cups cucumber, sliced/spaghetti
shredded
2 cups pineapple, chopped neatly
¼ cup red pepper, julienne
¼ cup green pepper, julienne
¼ cup dates, chopped
¼ cup feta cheese, cubed
1 packet shredded lettuce
DRESSING:
¼ cup mayonnaise
¼ cup mustard sauce
1 tablespoon brown sugar
2 lemon juice
1 tablespoon soy sauce
½ teaspoon salt
freshly ground black pepper
METHOD
Heat oil, fry almonds & sesame seeds
until light pink. Strain almonds &
sesame seed mixture & leave oil aside
to cool. Place almond mixture on a
tray & sprinkle crushed red chillies &
salt over. Mix all the salad dressing
ingredients together & add the left
over olive oil used for frying the
almonds.
Combine cucumber, pineapple, peppers,
dates & feta cheese. Tear lettuce into
pieces & mix with the other salad
ingredients. Pour dressing over the
vegetables & mix well. (Alternatively
you can serve the dressing separately
with the salad).
Pile the salad on a platter. Cover
salad with fried almonds & sesame seed
mixture.
INFO & TIPS
Note: It is important that you
assemble the salad just before serving
to avoid salad getting too soggy.
