INGREDIENTS
8 egg whites2 Cups Castor sugar½ teaspoon Cream of Tartar2 teaspoon Vanilla Essence
METHOD
-Place sugar, cream of tartar and egg whites in a heatproof bowl over a pot of simmering water - bowl must not touch water (or a double boiler) and whip continuously until sugar is dissolved and egg whites are warm to the touch (be careful not to leave egg whites too long or they will cook)-Remove bowl from simmering pot and using an electric whisk beat egg whites until peaks form (begin on slowest speed gradually moving to high)-Add vanilla essence and mix until combined-Use immediately

The recipe may seem complicated and long, but looks can be deceiving!
It is delicious, and actually really easy.
Also, when whisking the egg whites, be warned that it takes at least 5 minutes (dependant on your mixer) to get peaks.
I prefer it on a plain vanilla cake or cupcake.
