INGREDIENTS
1 egg white1/2 teaspoon cream of tartar2 cups white sugar2 tablespoon gelatine1 teaspoon any essence of your choiceGel colouring1 cup boiling water
METHOD
Whisk egg white, cream of tartar and sugar until combined.Mix water and gelatine until smooth.Add gelatine mix to egg white mixture and beat for 30 minutes until glossy.Add in a drop of coloring and essence of choice. I used candy floss.Grease a Pyrex dish with non stick cooking spray and pour in marshmallow mix.Cover with cling wrap and refrigerate overnight.Once set slice with a pizza cutter and roll in coconut or icing sugar.
