In a mixing bowl add sugar, egg whites ,cream of tartar and vanilla essence. , mix well. In a sausepan pour 2 cups of water and bring to boil , then add the gelatine mix well until all has dissolved , add the water mixture to sugar mixture and beat well for about 40 to 50 minutes until its glossy.in a large oven tray greased it nicely with spay and cook and pour your mixture in , allow to set for 3 to 4 hours . Toast coconut in the oven until golden brown , set aside , once your marshmallows has set , cut and roll in coconut , enjoy!
