250g butter, ¾ cup icing sugar, 1 cup maizena (corn flour), ½ cup oil, ¼ teaspoon vanilla essence, ± 2 cups flour (as needed)Apricot jamDesiccated coconut
1. Cream butter and sugar. 2. Add rest of ingredients, and beat in.3. Add little flour at a time to make soft dough, binding by hand.4. Roll out into balls, then roll in coconut.5. Press with finger a hole (not all the way through).6. Place on a greased flat cookie sheet a few cm apart.7. Bake at 160 °Cup in preheated oven for about 15-20mins.8. When cooled, spoon in jam. Note: May colour jam, or use same recipe to make into robot biscuits with 3 blobs of dough, no coconut, but make holes. The colour jam red and green and leave 1 as is, spoon in the 3 different colour jams when baked.Can switch jam with melted chocolate, or thick custard & leave off coconut.
