INGREDIENTS
125g butter100ml castor sugar3 egg yolks5ml vanilla essence250ml flour10ml baking powder1ml salt100ml milk
Topping:3 egg whites100ml castor sugar250ml dessicated coconut
METHOD
Cream butter and sugar. Add egg yolks, one at a time, beating well after each addition, until light and fluffy. Add vanilla. Sift flour, baking powder and salt and add, alternatively with milk, in butter mixture. Spoon the mixture into a greased 23 cm loaf tin.
For topping:Beat egg whites until stiff. Add sugar and beat well. Add coconut and mix. Spoon on top of cake mixture. Bake in a preheated oven at 180 degrees for approximately 30 minutes.Reduce temperature to 160 degrees and bake for another 15 minutes. Turn out onto a wire rack to cool. (First try - came out lovely.)
