INGREDIENTS
125 g butter
1 C castor sugar
2 eggs - beaten
1 teaspoon vanilla essence
¼ C buttermilk
1 C mashed ripe (not over ripe)
BANANAS-3 med/ 2 large
⅓ C chopped pecans
1 and ¼ C flour
1 teaspoon BICARB
½ teaspoon salt
60 g chocolate- grated while cold
METHOD
Sift dry ingredients twice.
Cream together well: butter and Castor sugar.
Add beaten eggs with vanilla essence.
Mix banana and buttermilk and add in alternately with dry ingredients
Add nuts and chocolate.
Pour into 30 cm lined loaf pan.
Bake at 180degs- +- 45 minutes. (NOT ON THERMOFAN)
