INGREDIENTS
1 cup self raising flour
2 teaspoon ghee (Clarified butter)
2 teaspoon lemon juice
Egg yellow colouring
ghee (Clarified butter)/oil for frying
Syrup:
1 cup sugar
2 teaspoon lemon juice
¼ cup water
½ teaspoon rose essence
Yellow colouring
METHOD
Make syrup by melting ingredients over low heat until thick. Set aside. Rub ghee (Clarified butter) into flour and make a thin paste with water. Add lemon juice and enough colouring to make a dough mixture a bright yellow/orange colour. Heat oil/ghee (Clarified butter) in a frying pan. Pour dough mixture into a tomato/mustard sauce dispenser and drizzle into pan mixture in shapes of circles. Fry till golden brown and crispy. Soak fried hot jalebis in syrup for 2-3minutes and then place on a tray to cool. Do not cover immediately or the jalebis will go soft and soggy.
