INGREDIENTS
• ½ cup wholemeal flour
• ½ cup white flour
• 1 teaspoon baking powder
• 3 Weet-Bix, crushed
• 1 cup sultanas
• ½ cup coconut
• ½ cup sugar
• 2 tablespoon cocoa
• 150g butter
• 2 teaspoons golden syrup
METHOD
1. Sift flours and baking powder into a bowl and add remaining dry ingredients.
2. Combine margarine and syrup and melt over medium heat or in the microwave.
3. Add liquid ingredients to dry ingredients and mix well. Press into a lightly greased 20cm x 30 cm lamington tin.
4. Bake in a moderate oven, 180°C, for 25-30 minutes. When cold, dust with icing sugar.
INFO & TIPS
This recipe is the ideal lunchbox treat. Jazz it up with melted chocolate for a decadent treat! I didn't have golden syrup and substituted with honey and it worked just as good
