INGREDIENTS
500g fruit cake mix/raisins500g butter2 cups sugar 2 cups water 2 teaspoon bicarbonate soda6 eggs2 cups chopped nut 2 cups cherries 4 cups sifted flour ½ teaspoon salt 3 teaspoon mix spice or fine cinnamon 2 teaspoon baking powder1 cup oil
METHOD
Boil the first four ingredients in a big pot until it's dark brown (around 30+ minutes), Remove from heat and immediately add the bicarb soda whilst stirring.
Once the syrup has completely cooled, add the eggs and mix it in (by hand)
Add the rest of the ingredients besides the oil.Mix nicely (by hand)
Lastly, add the oil and mix well.
Bake in loaf pans. on 160°c for ½ hour then 140°c for ½ hour then bake for 15min on 120°c
