INGREDIENTS
2x large Eggs, beaten1 Cup Sugar 1 & ½ teaspoon Lemon Essence or6x teaspoon Lemon juice... ½ Cup Oil3xTsp Mayonaise (optional).. 1 & ½ Cups Cake flour2 teaspoon Baking Powder Pinch Salt¾ Cup Milk¼ Cup Water
Topping:2 Cups Icing Sugar1 teaspoon lemon essence3 teaspoon milk5 teaspoon soft Butter...Lemon zest for sprinkling..
METHOD
In a mixing bowl beat the eggs, sugar until light & fluffy. Then add in the oil, essence, flour, baking powder & lastly the wet ingredients beat until smooth batter. Pour the batter into the muffin cups &... Bake in 180 degrees for 20 minutes.
For the topping in a small bowl add the icing to it. Add the soft butter, essence & lastly the milk.
Decorate your Cupcakes with the lemony icing & sprinkle with some lemon zest
INFO & TIPS
Add orange essence instead of your lemon essence.
