In a mixing bowl beat the eggs, sugar until light & fluffy. Then add in the oil, essence, flour, baking powder & lastly the wet ingredients beat until smooth batter. Pour the batter into the muffin cups &... Bake in 180 degrees for 20 minutes. For the topping in a small bowl add the icing to it. Add the soft butter, essence & lastly the milk. Decorate the cupcakes with the lemony icing & sprinkle with lemon zest
