INGREDIENTS
CUPCAKES:125g butter1 ½ cups flour1 cup sugar3 eggs1 teaspoon vanilla essence1 tablespoon oil¼ cup milk2 ½ teaspoon baking powder
COFFEE MIXTURE:125ml boiling water½ cup castor sugar2 tablespoon coffee
CREAM CHEESE ICING125g butter2 cups icing sugar1 tablespoon vanilla essence½ tub cream cheese
METHOD
CUPCAKES:1. Beat butter and sugar until creamy. Add eggs, vanilla, oil and milk. Beat on high until frothy, then add in flour and baking powder and beat until combined. 2. Spoon into cupcake cases and bake at 180 degrees for 12-15 minutes.
COFFEE MIXTURE:Mix all ingredients together and spread ½ tablespoon of coffee mixture on each cupcake once cooled.
CREAM CHEESE ICING:1. Beat butter and icing sugar well. Add vanilla essence and cream cheese and beat until fluffy. 2. Pipe the icing on to cupcakes.3. Dust cocoa powder with a sieve.4. Decorate as desired.
