1 cup castor sugar1 cups oil4 eggs1 and ½ to 2 cups flour2 cups grated carrot2 tablespoon lemon juice¾ cup pecan nuts- chopped1 teaspoon cinnamon powder2 and ½ teaspoon baking powderPinch of salt¼ cup sesame seeds¼ cup almonds chopped
Grate carrots and sprinkle lemon juice over and set aside.*Chop pecan nuts and set aside.*Beat oil, castor sugar, eggs and vanilla essence till fluffy.*Add the rest of the ingredients and mix well.*Pour into well greased pan or paper cups for cup cakes.Bake in a preheated oven @180°Cup for 15-20 minutes for cupcakes and 30-40 minutes for larger cake.
