Ingredients: 3 XL eggs 1 cup ordinary sugar 1 cup oil 1 ½ cups cake flour (sifted) 2 teaspoon cinnamon powder 3 teaspoon baking powder ½ teaspoon bicarb. of soda Pinch of salt 2 cups carrots (finely grated) 1 cup pecan nuts (chopped) ¼ cup water
1. Beat eggs and sugar well. 2. Add oil and beat till fluffy 3. Mix dry ingredients together and then add in. Beat till combined. 4. Fold in carrots and nuts. 5. Lastly add in water and mix gently. 6. Pour in greased and lined baking pans and bake in preheated oven at 180 °c till done. 7. Allow to cool for few minutes before removing from tins and allow to cool further. 8. Beat cream cheese till smooth. 9. Beat butter and icing sugar. Add vanilla and milk. Then beat in cream cheese. 10. Sandwich cakes with frosting, frost the top of cake, sprinkle cinnamon powder and decorate as desired.
