Ingredients:250g butter1 cup ordinary sugar4 eggs2 teaspoon vanilla essence1 cup milk2 cups cake flour3 teaspoon baking powder
Coffee syrup-1 ½ cups boiled water¼ - ½ cup ordinary sugar4 tablespoon strong instant coffee
Frosting-1 tub Lancewood mascarpone cheese125g Wooden Spoon butter (room temp.)2-3 cups icing sugar1 teaspoon vanilla essenceCocoa powder
Method:1. Preheat oven to 180degC.2. Line cupcake pans with cupcake paper cases.3. Beat butter and sugar till light and fluffy.4. Add eggs one at a time, beating after each addition.5. Mix vanilla into milk.6. Sift dry ingredients, then add alternatively with milk and beat until a smooth batter is formed.7. Fill cups ¾ full and bake for 15min until risen and when removes clean when skewered.8. Whilst cupcakes are baking, make coffee syrup.9. Remove cupcakes from ovem and randomly poke all over with a fork.10. Pour 2 tablespoon (or more) of syrup over cake and allow to soak.11. Leave aside to cool to room temperature, then leave in the fridge to chill whilst making frosting.12. Beat mascarpone till smooth.13. Then beat butter with mascarpone, then beat with icing sugar.14. Add vanilla and mix in. If too wet, beat in more icing sugar. If too dry, add a dash of milk.15. Pipe frosting onto cupcakes, dust over a little cocoa powder and leave to set in fridge. Serve chilled.
