INGREDIENTS
4 large eggs
¾ cup sugar (I add ½ cup only)
¼ cup oil
1 teaspoon vanilla essence
Zest from 1 lemon (optional)
1 cup cake flour
2 teaspoons baking powder
½ cup milk
Pinch of salt
Whipped cream for frosting. Toppings of your choice (Dried rose petals, crushed nuts, melted chocolate etc. Whatever you like for Decorating)
METHOD
Add sugar and eggs to a bowl beat till light, creamy and thick.
Add in the oil beat again, add lemon zest and vanilla essence. Mix well fold in the flour and baking powder add milk mix till combined. Pour in to cupcake cases bake at 180°C for 15 minutes or till golden brown and a toothpick inserted comes out clean.
Frost with you favorite butter cream or whipped cream. Decorate as desired. Enjoy.
INFO & TIPS
I used Bakels imitation cream for frosting my cuppies its whips up almost instantly. Added different essence (rose& ice cream) for flavors and food colours.
