INGREDIENTS
½ cup cocoa1 cup boiling water1 ⅓ cups flour2 teaspoons baking powder¼ teaspoon salt½ cup rama1 cup sugar2 large eggs2 caps vanilla essence
METHOD
Preheat oven to 180° and line 16 muffin cups.
In a small bowl stir until smooth the boiling water and cocoa. Let it cool to room temp.
In another bowl, whisk together the flour, baking powder and salt and set aside.
Beat rama and sugar together until light and fluffy.
Add the eggs one at a time and then add vanilla essence.
Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.
Fill each muffin cup about 2/3 full with batter and bake for 30 minutes depending on your oven.
Once completely cooled, frost with icing of your choice.
INFO & TIPS
I like to use the icing that i posted in my previous chocolate cake recipe and top with grated chocolate.
