INGREDIENTS
Wet ingredients:
1 cup oil
2 eggs
1 ½ cup buttermilk
1 teaspoon vanilla essence
1 teaspoon white vinegar
40 ml red colouring (full bottle of Robertson colouring)
Dry ingredients:
2 ¼ cups flour
1 teaspoon salt
1 teaspoon bicarb
1 teaspoon coco powder
1 ½ cups sugar
Cream cheese icing:
½ lb wooden spoon white margarine
500 g or more icing sugar
1 tub plain cream cheese
1 tap vanilla essence
METHOD
Beat all wet ingredients. Sift in dry ingredients and mix till smooth. Pour into two greased sandwich baking pans or cupcake pans and bake at 180 degrees for approx 15-20 minutes or until skewer comes out clean.
When cooled ice with cream cheese frosting.
