Vanilla Hot Milk Sponge Cake

This is the only cake mix I use for all my cakes.

INGREDIENTS

2 cups cake flour1 ½ cups sugar4 teaspoons baking powder1 cup milk125 ml cooking oil4 eggs10 ml vanilla essence

METHOD

Bring milk to boiling point and add the cooking oil with the vanilla essence.Cream the eggs and sugar together.Add the cake flour, baking powder and then the warm milk and oil mixture.Mix well together.Pour into 2 cake pans and bake in at 180°C till done. About 30 minutes.
For coffee cake add the instant coffee to the warm milk, for chocolate add in 45 ml cocoa powder to the cake flour.Ice once cool with butter icing or caramel.
