Coconut Ice Cupcakes

INGREDIENTS

80g butter
2/3 cup sugar
1 egg
2 teaspoon vanilla essence
1 cup of flour
1-½ teaspoons baking powder
2/3 cup desiccated coconut
2/3 cup milk

Icing
1 cup desiccated coconut
2 cups icing sugar
1 teaspoon butter
Red food colouring

METHOD

Cream butter and sugar until light and fluffy
Beat in egg, vanilla and milk
Combine flour, coconut and baking powder and add to butter mixture
Bake at 180 degrees Celsius for 12 minutes

For icing - mix all ingredients and spread on cool cupcakes
