2 cups cake flour (Blue ribbon brand) Pinch salt 1 cup white sugar125g rama margarine soft to touch2 ½ teaspoon royal baking powder 4 Large fresh eggs(room temperature) 1 cup fresh milk2 Tablespoon poppy seeds1 teaspoon lemon juice1 lemon zest(freshly grated) 1 teaspoon lemon essence (optional)
In a bowl, add sugar and rama margarine, beat till light and fluffy. Whisk in eggs, combine the wet ingredients the sugar must be dessolved before adding the dry ingredients flour, salt and baking powder. Lightly add milk and form a soft batter gently. Add poppy seeds and lemon juice and lemon zest. Pour batter into muffins cupcake liners just above halfway. Bake preheated oven 180 degrees for 15-20 minutes, test with a skewer should come out clean. For extra sweet finish sprinkle icing sugar.
