175g softened butter200ml muscovado sugarZest of 2 limes3 eggs175g strawberries (hulled & chopped)200ml flour200ml self-raising flour2 tablespoon fresh lime juice Frosting-125g softened butter2 cups icing sugarZest of 1 lime2 tablespoon lime juice Topping-Lime slices and strawberries
1. Preheat oven to 180degC. Line cupcake pans with paper cups.2. Beat butter, sugar and zest until creamy.3. Add 1 egg at a time, beating after each addition.4. Dust strawberries with a little plain flour, stir gently with a spatula into creamed mixture.5. Add sifted flours and lime juice.6. Spoon into cups till ¾ full and bake for 15-20min.7. Cool for 10min, and make frosting.8. Beat butter and icing sugar until creamy.9. Add zest and lime juice. Frost cupcakes.10. Decorate just before serving with strawberries and lime slices.
