INGREDIENTS
250g butter
½ cup sugar
3 egg yolks
1 teaspoon vanilla essence
½ cup milk
1¼ cups flour
2 teaspoon baking powder
Topping:
3 egg whites
½ cup sugar
1 cup dessicated Coconut
METHOD
Cream butter and sugar. Add egg yolks one at a time. Add vanilla. Sift dry ingredients and add to mixture alternating with milk.
Pour into greased muffin pans.
Beat egg whites until stiff. Add sugar and mix. Fold in coconut. Pour over cake mixture. Decorate with chopped nuts if desired. Bake at 180 for 15-20 minutes.
