Boiled or roasted beetroot, cut into cubes
Marinate with extra virgin olive oil, salt, coarse black pepper, dried rosemary, vinegar & lemon juice. Add flaked almonds. Sprinkle cubed feta cheese on top, as well as chopped chives & parsley. Rocket leaves or any other salad leaves can be added as well.
