INGREDIENTS
                      6 pieces Chicken fillet 
1 Onion chopped
½ ea Robot peppers sliced 
½ punnet Musrooms chopped
2 teaspoon Basil pesto
Marscarpone cheese
Salt to taste 
Pepper to taste 
Cottage cheese
Gouda cheese
Portuguese spice
Grounded green chilles
                    
METHOD
                      Method 
Slit chicken fillet lengthwise to create a pocket, set aside.
Saute the onions, robot peppers, mushrooms, salt, pepper and green chillies, allow to cool completely.
Than add cottage cheese and gouda cheese. Set aside some for garnish
In a separate bowl add the basil pesto to the marscarpone cheese. Set aside some for ganish.
Spread the basil marscarpone in the fillet and stuff with the sauted mixture, close the chicken with a toothpick,
Now sprinkle the portugese spice on the chicken.
Fry the chicken on medium heat until it ia cooked thru.
Add the extra filling and marscarpone on top to decorate.
Serve with chips!!!!!  Enjoy!!!
