Ingredients: 1kg chicken fillet (small cubes) 1 teaspoon salt 1⁄2 teaspoon freshly cracked black pepper 1⁄2 teaspoon white pepper 1 teaspoon chilli powder 1 teaspoon ground ginger 1⁄4 cup orange juice 1⁄4 cup maizena (corn flour) 2 tablespoon flour
Basting Sauce 1 tablespoon oil 1 teaspoon ground garlic 1 teaspoon ground ginger 2 cups Orange juice 1 tablespoon soy sauce 2 tablespoon sweet chilli sauce 1 tablespoon vinegar 2 tablespoon maizena (corn flour) mixed in 1 tablespoon cold water
Garnish- 1 tablespoon sesame seeds Chopped spring onions 1 teaspoon rough red chillies
Method: 1. Mix marinade ingredients well. 2. Add in chicken. Coat well. 3. Refrigerate for 30 minutes. 4. Deep fry chicken on 150degC until golden. 5. In a bowl mix orange juice, soy sauce, sweet chilli sauce & maizena (corn flour) mixture. 6. In a wok, heat oil for sauce. 7. Add ginger & garlic fry for 30 seconds. 8. Add orange juice mixture & simmer until sauce thickens. 9. Add chicken and mix to coat well. 10. Sprinkle garnish & serve.
Serve with plain rice, or egg fried rice or veg stir fry. Or make into wraps with salad.
