Morrocan Carrot Red Lentil Soup Pic cred: Ruhana EbrahimRec cred: @mama_taught_me_well Ingredients:2 tablespoon oil1 onion (chopped)1 teaspoon ground garlic2 large carrots (peeled and chopped)1 teaspoon dhana jeeroo powderPinch turmeric powder1 teaspoon salt ½ teaspoon white pepper½ teaspoon paprikaPinch cinnamon powder1 cup red lentils (rinsed) 1 large tomato (liquidized)4 cups water 2 teaspoon chicken stock powder Chicken-2 large chicken fillets (small cubes)1 teaspoon ground garlic1 teaspoon ground green chillies½ teaspoon salt⅓ teaspoon white pepper½ teaspoon dhana jeeroo powder1 tablespoon lemon juice1 tablespoon oil Garnish-Fresh corianderDrizzle creamRed chilli flakes Method:1. Mix chicken in above. Heat oil. Cook chicken till just done. Leave aside.2. Heat oil in a large pot over medium heat. Sauté onion, carrots and garlic until soft, then add spices and sauté till fragrant. 3. Add tomatoes and lentils and stir to combine.4. Cook till tomato has reduced, then add water & chicken stock powder.5. Simmer on low heat until lentils are tender.6. Blend everything to create a creamy soup.7. Add cooked chicken to soup and heat together.8. Drizzle a little cream over, garnish with red chilli flakes & coriander.
