Potato Crouton Casserole
Pic cred: Ruhana Ebrahim Rec cred: @mama_taught_me_well Ingredients: 4-5 large potatoes (baked, peeled & diced) 60g butter 3 cups milk 1 cup water ¼ cup cake flour 1 teaspoon salt ½ teaspoon white pepper 2 tablespoon ground garlic paste 1 teaspoon ground green chillies Grated mozzarella/ or pecorino romano cheese (or cheese of choice) Dried mixed herbs White bread slices (buttered and cut into crouton pieces)1. Heat butter, add milk and water and heat through.
2. Add flour and whisk in. Continue whisking till sauce thickens. 3. Add salt, pepper, garlic and chillies. Allow to heat through and remove from heat. 4. Add in some cheese and mix in. 5. Add potatoes to sauce and then pour into oven proof dish. 6. Sprinkle cheese over and then a little dried mixed herbs. 7. Now arrange bread pieces, overlapping and filling the tray, covering potatoes. 8. Bake in preheated oven at 180°C till croutons are golden and crispy.
