INGREDIENTS
Potato Crouton Casserole

Ingredients:4-5 large potatoes (baked, peeled & diced)60g butter3 cups milk1 cup water¼ cup cake flour1 teaspoon salt½ teaspoon white pepper2 tablespoon ground garlic paste1 teaspoon ground green chilliesGrated mozzarella/ or pecorino romano cheese (or cheese of choice)Dried mixed herbsWhite bread slices (buttered and cut into crouton pieces)
METHOD
1. Heat butter, add milk and water and heat through. 2. Add flour and whisk in. Continue whisking till sauce thickens. 3. Add salt, pepper, garlic and chillies. Allow to heat through and remove from heat. 4. Add in some cheese and mix in.5. Add potatoes to sauce and then pour into oven proof dish. 6. Sprinkle cheese over and then a little dried mixed herbs.7. Now arrange bread pieces, overlapping and filling the tray, covering potatoes.8. Bake in preheated oven at 180°C till croutons are golden and crispy.
Note: You may even add in sauted mushrooms to the potato and sauce.
