Ingredients: 4 large potatoes (baked, peeled & diced) 60g butter ½ liter milk 1 cup water ¼ cup cake flour 1 teaspoon salt ½ teaspoon white pepper 1 tablespoon crushed garlic 1 teaspoon ground green chillies (optional) Grated pecorino romano cheese (or cheese of choice) White bread slices (buttered and cut into crouton pieces)
Heat butter, add milk and water and heat through. Add flour and whisk in. Continue whisking till sauce thickens. Add salt, pepper, garlic and chillies. Allow to heat through and remove from heat. Add in some cheese and mix in. Add potatoes to sauce and then pour into oven proof dish. Sprinkle more cheese over, then arrange bread pieces and bake in preheated oven at 180 deg C till croutons are golden and crispy.
