Cut sweet potatoes lengthwise and lay them in a baking tray flat side down. Drizzle olive oil and sprinkle salt and pepper. Bake on 180 degrees until the potatoes are cooked through (turn potatoes over when halfway done). When done, cool slightly then fluff the flesh by scraping with a fork. Sprinkle with the spices then top with the rest of the ingredients. Pop it back under the grill until the cheese has melted.

Can use any topping such as sour cream, red onions, avocado. Can also be made using other vegetables such as regular potatoes, butternut or squash.
