INGREDIENTS
1 tin Koo creamstyle sweetcorn2 beaten eggs1 teaspoon salt½ teaspoon white pepper1 teaspoon dhana jeeroo (coriander cumin) powder½ teaspoon baking powder1 cup cake flourChopped dhania (coriander) (coriander)1 teaspoon ground green chilliesOil for frying
Also needed-Diced pepperDiced red onionSweetcorn kernels (steamed in microwave)Grated Lancewood gouda/cheddar cheeseSpring onionsFreshly cracked black pepper
METHOD
1. Mix ingredients above to make fritter batter.2. Do not add in baking powder until your pan is hot and ready.3. Toss the veg with black pepper. May toss cheese with it too so it's faster and easier to place in fritter.4. Add in baking powder when ready, ladle on batter till it's the size of a regular omelette. 5. As soon as the bottom of the large pancake fritter can lift from the pan, flip over. Do not wait for it to form bubbles.6. Once flipped over, quickly place on one half of the fritter the cheese and veg.7. Close into an omelette and toast on both sides till cheese has melted.8. Garnish with coriander, corn kernels, red onion and a small crack of salt. Eat right away.
INFO & TIPS
I kept adding a little oil at a time to pan, as I fried. I don't recall how many came out as I used 1/3 of batter to make plain fritters.
