INGREDIENTS
1 can sweetcorn creamstyleSeasonings salt and white pepperBlack pepper sprinkle on grated cheese1 teaspoon fresh red and green crushed chillie relishes ¼ teaspoon garlic paste ½ teaspoon kashmiri red chillie powder¼ teaspoon tumeric powder¼ teaspoon dhania (coriander) /jeeru (cumin) powder300g sweet corn kernels or whole kernels steamed and slightly blend in food processor. 3 Tablespoon butter ghee (Clarified butter)200g Cheese cheddar 100g Mozzarella 4 Tablespoon Cream cheese 1 Tablespoon maizena (corn flour) /cornflour 1 large red onion grated remove excess moistureFresh chopped dhania (coriander) for garnish Freshly chopped spring onions optional
METHOD
In a saucepan, add water bring to steam the whole Corn kernal drain, slightly blend in liquidizer, add 1 teaspoon green masala and set aside,add white pepper. If using sweet corn in can, pour into a bowl set aside. Add Tablespoon maizena (corn flour) /corn flour , Green chillies chopped give it a quick mix. Fresh chopped spring onions for garnish,optional.
In a small saucepan, braise the red onions,garlic paste in butter ghee (Clarified butter).
Remove the cooked mixture, add sweet corn mixture. Grate the cheese keep aside sprinkle black pepper. Add the grated cheese and mix in cream cheese. Garnish with fresh chopped dhania (coriander). Check for seasoning. Lightly toss and cling wrap this filling is now ready.
