1 cup brown sugar
2 large eggs
¾ cup oil
1 ¼ cup wholemeal flour
3 teaspoon baking powder
2 teaspoon ground ginger
6 pieces of ginger ,chopped
1 cup coarsely grated carrots
Whisk sugar eggs and oil together till thick
Fold in flour baking powder and ginger followed by fresh ginger and carrots
Bake for 20 -25 minutes on 180°
