@Faeeza Ebrahim - I find a brush with lemon juice generally keeps it green and looking fresh
Was really good. But only got the size of the balls (pre-fry) right with my third batch. If they were too big they were still raw in the centre.
They should be slightly larger than your thumbnail as they do expand in the oil.
@Afzal Cassim - Its when you add the spices to oil or ghee and cook it slightly on a low - medium heat. Helps release the aromas of the spices.
