RECIPE
1kg chicken pieces/ quartersLime slices/wedges
Marinade-1 tablespoon crushed garlic3 tablespoon harissa paste2 tablespoon oil1 tablespoon honey1 teaspoon salt1 teaspoon freshly cracked black pepper
Harissa paste-1 whole roasted red pepper (seeds removed)100g dried red chillies1 tablespoon crushed garlic1 teaspoon caraway seeds (shah Jeeru (Cumin))1 teaspoon coriander seeds 1 teaspoon cumin seeds 1 teaspoon salt1⁄4 cup lemon juice¼ cup olive oil
Method:1. Marinate chicken and place into an oven tray.2. Grill on medium heat turning over once or twice to cook through.3. Charr the outside of chicken a little & serve with limes.
Note: store Harissa paste in airtight container in freezer. Thaw out when needed.
