RECIPE
Grilled Harissa Chicken

Ingredients:
1kg chicken pieces/ quarters
Lime slices/wedges
Marinade-
1 tablespoon crushed garlic
3 tablespoon harissa paste
2 tablespoon oil
1 tablespoon honey
1 teaspoon salt
1 teaspoon freshly cracked black pepper
Harissa paste-
1 whole roasted red pepper (seeds removed)
100g dried red chillies
1 tablespoon crushed garlic
1 teaspoon caraway seeds (shah Jeeru (Cumin))
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon salt
1⁄4 cup lemon juice
¼ cup olive oil
Method:
1. Marinate chicken and place into an oven tray.
2. Grill on medium heat turning over once or twice to cook through.
3. Charr the outside of chicken a little & serve with limes.
Note: store Harissa paste in airtight container in freezer. Thaw out when needed.
