115g butter
1 ½ cups castor sugar
¼ cup buttermilk
1 cup mashed bananas
½ cup pecan nuts - chopped
2 large eggs
2 cups flour
¼ teaspoon baking powder
¾ teaspoon bicarbonate of soda
1 teaspoon salt
1 slab dairy milk - grated
Sift flour, salt, baking powder and bicarbonate of soda twice.
Cream butter and sugar till light and creamy. Add eggs and beat till light and fluffy.
Into buttermilk blend in bananas and nuts and mix in alternately with flour mixture into a batter. Stir in chocolate.
Pour into a greased loaf pan.
Bake at 180 for about 35-45 minutes
