4 eggs room temperature ½ cup sugar ¾ cup oil 1 teaspoon vanilla essence1 cup milkUse a blender, blend all the above ingredients until mixture turn white . In another large bowl add 2 cups flour 2 cups dessicated coconut and 1tbs baking powder, mix then pour in the blended mixture and whisk well.
Pour cake mixture onto a greased oven dish. Bake in preheated oven 180° for 30 minutes (until done)Leave cake to cool for 10 minutes. Mix together ¾ cup condensed milk and ¾ cup milk.Use a skewer, make hole in the cake then pour the condensed milk mixture over the cake.Leave to soak and cool completely.
In a bowl whisk 200ml of whipping until thick then add ¾ cup dedicated coconut (icing sugar to taste). Spread over cake cut and decorate as desired leave to set in fridge.
