INGREDIENTS
For the cake:
4 eggs
1 cup sugar
½ cup oil
½ cup warm milk
1 teaspoon pistachio essence
½ teaspoon cardamom essence
1 drop green food colouring (optional)
1½ cups cake flour
3 teaspoons baking powder
For the topping:
1 cup fresh cream (whipping cream)
2 tablespoons icing sugar
A drop of green food colouring (optional)
A few drops of pistachio essence
Crushed pistachios (optional, for decoration)
METHOD
1. Preheat oven to 180°C.
2. In a bowl, beat eggs and sugar until light and creamy.
3. Add in oil and warm milk. Mix well.
4. Stir in pistachio essence, cardamom essence, and green colouring.
5. Sift in flour and baking powder, and gently fold into the mixture.
6. Pour into a greased cake tin and bake for 50–60 minutes, or until a toothpick comes out clean.
7. Let the cake cool completely.
To make the topping:
1. Beat cream, icing sugar, green colour, and pistachio essence until thick.
2. Spread over the cooled cake.
3. Decorate with crushed pistachios if you like.
INFO & TIPS
You can leave out the green food colouring if you prefer a natural look. This cake goes well with tea and is a crowd-pleaser at Eid or family gatherings!
