Beat yolk and sugar till creamy. Add oil first, beat then add coffee and beat. Sift dry ingredients together and add to above mixture and beat well.In a separate bowl beat egg whites untill stiff peaks form and then gently fold into cake mixture. Pour into greased pan of choice and bake for between 20-25 minutes. Butter Cream Icing250g Room Temperature Butter2 cups icing sugar1 teaspoon vanilla essence2 tablespoons milkBlue gel colouringBeat butter untill creamy add 1 cup icing one cup at a time beat well.Add milk and vanilla essence last and beat well

Twinkle Twinkle Little Star ⭐️ Cake
Level the tops of the bottom and top of the Giant cupcake.
Cover the cupcake in a light coating of buttercream.
Roll out fondant and cover the bottom of the Giant cupcake.
Colour buttercream blue and pipe the top of the Giant cupcake.
I used cookie cutters to cut out the moon and stars from yellow fondant.
Brushed with gold luster and left them to dry over night.
