INGREDIENTS
1 teaspoon bicarbonate of soda1 cup sour cream (maas)1 cup chopped dates2 cups Safari cake mix½ cup chopped glazed cherries 1 cup chopped walnuts2 cups all-purpose flour (divided into ¼ cup and 1¾ cups)113g (½) cup butter 1 cup normal white sugar1 large eggGrated rind of one orange1 teaspoon fine salt
METHOD
Preheat oven to 180°C. Line a baking tray with greased parchment paper and keep aside.
Mix together sour cream and bicarbonate of soda in a small bowl and set aside.
Combine the dates, cake mix, cherries, and nuts with ¼ cup of the flour and toss to coat the fruit and nuts. Set aside.
Beat together the butter and sugar until fluffy. Mix in the egg, then the orange rind, then the sour cream and bicarbonate of soda mixture.
Add the flour and the salt and mix together. Combine fruit/nut mixture with creamed ingredients and mix well to distribute the fruit and nuts evenly.
Pour batter into the prepared baking tray
Place the batter-filled pan into the preheated oven and bake at 160°C for 1½ hours or until a wooden skewer inserted into the center comes out clean.
Remove to a rack to cool for 5 minutes. Use the edges of the parchment paper to lift the cake out of the pan. Let it cool completely and tuck in ...
